Sweet Potato Salmon Patties

Ingredients
- 1 can (150g) wild salmon (boneless and skinless)
- 1/2 cup cooked white sweet potato, mashed*
- 2 tbsp green onions, chopped
- 1 tbsp coconut oil
- 2 tbsp Water
- 1 tsp tapioca starch
- 1/2 tsp of sea salt
- coconut oil fro fryiing
Instructions
- Drain liquid from can of salmon.
- In medium mixing bowl, mix together salmon, mashed sweet potato, green onions, coconut oil and salt. Set aside.
- In a small bowl, whisk together the tapioca starch and water until the starch dissolves. Add to salmon mixture and mix until incorporated.
- Form mixture into 4 patties.
- Add coconut oil to frying pan (1/2 - 1 tbsp) and heat over medium heat until oil has melted and pan is hot. Once oil is hot, add the patties. Cook for about 3-4 minutes on each side.

Notes
- *If you do not already have a mashed sweet potato on hand, you can quickly cook one in the microwave. First prick the potato a few times, then bake in microwave for approximately 4 minutes until tender and able to mash.
