1capcooked beans of your choice(white beans, chickpeas, etc.)
1cupcooked quinoadivided
1cucumbersliced and divided
Cucumber Dill Dressing
½ cuptahini
½lemonjuiced
2tbspdill
½cupcucumberchopped
1green onionchopped
½ tspmaple syrup
2dashessalt
2dashesblack pepper
¼ tspgarlicminced
Instructions
Divide salad ingredients into two bowls.
dd all dressing ingredients into a food processor or blender and blend until creamy. You may need to add water to thin. Add it slowly, a tbsp at a time until the desired thickness is reached.
Add dressing to salads and gently toss.
Serve & enjoy!
Notes
Extra dressing can be stored in the fridge for a few days.
