Ingredients
- 1 whole chicken 3 pounds
- 1 cup carrots cut in large pieces
- 1 cup celery cut in large pieces
- 2 cloves garlic
- 1 onion medium
- 1 lemon sliced
- 2 sprigs rosemary
- 2 sprigs thyme
- 1 cup chicken stock
- 1 tsp sea salt
- 1 tsp papaya pepper
- 2 tbsp olive oil
Instructions
- Preheat oven at 400 degrees.
- Pat chicken dry and place in baking dish or roasting pan.
- Stuff chicken with carrot and celery pieces, onion, garlic, lemon slices, Rosemary and thyme sprigs.
- Put any left-over ingredients in the baking dish around the chicken.
- Coat the chicken with the olive oil then add salt and papaya pepper.
- Cover chicken with foil and bake for 30 minutes.
- After 30 minutes, remove the foil and bake for another 30 minutes or until the internal temperature reads 165 degrees.
